Baked Jelly Filled Donuts Recipe EASY!

I’m embarrassed to admit this, but I don’t like frying things. I’m scared that some oil is going to pop out and head straight for my eye. BUT (and it’s a big but), I have a problem, because I really like donuts. So, we’re going to bake, not fry, some jelly filled donuts. If you want to see the video tutorial, click below! // ingredients

2 cups flour (divided in 1/2)

1/4 cup sugar + 1/2 cup sugar for rolling donuts

1 packet instant yeast

1/4 tsp salt

2/3 cup warmed milk

4 tablespoons butter, melted + 1/2 stick melted for coating

2 egg yolks

1/2 tsp vanilla

1/2 cup jelly for filling

  1. Mix the dry ingredients together.

  2. Add the wet ingredients (except jelly) and mix on low until well blended.

  3. Cover the mixture with plastic wrap and wait 10-15 minutes.

  4. Add 1 cup of flour and knead for 5 minutes.

  5. Let rise in a 100 degree oven for 45 minutes or set it on the counter for an hour and a half. It should get about double in size. I left the plastic wrap on the bowl in the oven and it was just fine.

  6. Line a baking sheet with parchment paper and preheat oven to 375 degrees.

  7. Roll out the dough and use a round cookie cutter or one in a heart shape, around 3 inches in diameter.

  8. Flour your work surface and roll the dough to about 1/2” thick.

  9. Cover the cut out donuts with a tea towel and let rise in that 100 degree oven for about 20 minutes. You could also do this on the countertop for 45 minutes. They will puff up a bit.

  10. Remove the tea towel and put into a 375 degree oven for 12 minutes, or until golden on top.

  11. Cut a hole into the side of the donut and pipe in the jelly.

  12. Brush some melted butter on these cute little donuts and then roll them in sugar while they were warm.

I was expecting this to be hard, but it really wasn’t. There was just a little more time involved, waiting for the dough to rise. But these donuts were so worth the wait. They aren’t too sweet, but definitely sweet enough to serve up to your sweetie for Valentine’s Day breakfast in bed.
