Ultra Healthy Red Velvet Cupcake Recipe

Today I am going to share a healthy cupcake recipe without sugar. You will not believe how easy the frosting is. This is an ultra healthy red velvet cupcake recipe which sounds too good to be true, but these cupcakes are pretty good, considering the ingredients are so simple and healthy. They would be great any time of year but we are going to make these red, white and blue cupcakes for those that are looking for a healthy dessert at your summer barbeques and parties. cupcake ingredients

  • 2 eggs

  • 2 tsp. water

  • 8 Tbsp. Oat bran

  • 4 tsp. Cocoa powder

  • 1 tsp. Baking powder

  • 3 Tbsp. Truvia 

  • 4 Tbsp. Fat free Greek yogurt

  • 2 Tbsp. Skim milk

  • 1/2 tsp. Vanilla extract

  • Red food coloring

  1. Pre heat the oven at 350F.

  2. Separate the egg whites from the yolks.

  3. Put the whites in a mixer with the 2 tsps. of water and mix until the whites are stiff. Set aside.

  4. Mix all the dry ingredients in a bowl.

  5. Beat the egg yolks, yogurt, milk and vanilla. Slowly add the egg whites and the dry ingredients, add red food coloring until you get the desired color.

  6. Pour into 6 lined muffin tins, silicone baking cups, or a muffin pan sprayed with Pam.

  7. Put in the oven for 25 minutes. Insert a toothpick inside a cupcake; if it comes out clean they are done. If not bake for 2 more minutes and test again.

  • 1 container sugar free Cool Whip

  • 1 package sugar free instant vanilla pudding

  • 1 cup Skim milk

  • 1 tsp. Vanilla extract

  • Blueberries for decor



frosting instructions

  1. In a medium bowl, combine pudding mix with milk and vanilla. Mix until smooth. 

  2. Gently fold in whipped topping until no streaks remain. 

  3. Next you will put the frosting on top and a few blueberries for decor and you have some delicious, yet healthy red velvet cupcakes.

  4. Store in the refrigerator. The icing will hold, but you will want to keep them in a cool place.
