Keto Lemon Cupcakes + Easy Lemon Crafts

Let’s have some Summer fun! These cupcakes and lemon place setting ideas are perfect for any Spring or Summer party. Whether you’re planning a baby shower, bridal shower, or lemon themed birthday party, I’ve got you covered in this post!

First, I’ll show you how to make keto lemon cupcakes, and then I’ll share a couple of easy lemon crafts and ideas for lemon place setting decor.

These cupcakes are so yummy and refreshing. This recipe makes 24 regular sized cupcakes. I recommend silicone baking cups when baking with almond and coconut flour. These are the ones I like to use.

Ingredients for Cupcakes

Ingredients for Frosting

  • 1/3 cup butter

  • 8 ounces cream cheese , softened

  • 2 cups Lakanto monk fruit sweetener

  • 1 teaspoon pure vanilla extract

  • 2 teaspoons  milk

  • 1/2 teaspoon of that lemon juice

  • 1 teaspoon of lemon zest


Instructions for Cupcakes

  1. Preheat oven to 350 degrees F.

  2. Add the milk to the vinegar, so it can curdle for 5 minutes while we mix the other ingredients together.

  3. Combine the dry ingredients.

  4. Combine the wet ingredients, adding the curdled milk last.

  5. Slowly mix those wet and dry ingredients together.

  6. Evenly divide the batter in the silicone baking cups. Bake for 18-23 minutes, or until a toothpick comes out clean.

  7. Allow cupcakes to cool for at least 30 minutes. Transfer to wire racks to cool completely to room temp before frosting.


Instructions for Frosting

  1. Using a hand mixer, add the softened butter and beat for 2 minutes until that butter is light and fluffy.

  2. Add the cream cheese and continue beating for an additional 3 minutes until the butter and cream cheese are combined.

  3. Slowly add the powdered sweetener, vanilla extract, lemon juice, lemon zest and milk and beat for 2-3 minutes until creamy and smooth. 

  4. Cover and chill in the fridge until ready to frost.

  5. Store cupcakes covered in the fridge for up to a week.

The first idea is to simply cut a small slit in the lemon and add a place card in the slit.

Or decorate a toothpick and stick that in the lemon. You could also write the guests names right on the lemon with a Sharpie.

Or use a little twine and a hole punch to attach that nametag to the lemon.

Another way to decorate the table would be to add a cute sign. I have this little frame and just printed out a cute lemon sign to put in there. If you had several frames you could do a separate one for each place setting.

Filling a glass jar with lemon slices and then tying a little twine around the top is so simple, elegant and low cost. You could add some yellow flowers or just leave it like this.
