Cream Cheese Cranberry Bread

You might have some extra cranberries sitting around after the holidays and I have the perfect way to use them up. We use fresh cranberries to make this cream cheese cranberry loaf and I am going to show you just how easy it is to make. I created a video, if you want to see the recipe in action. This recipe makes a large loaf and takes about 20 minutes to prep and then an hour in the oven.

ingredients

  • 2 cups flour

  • 2 cups fresh cranberries

  • 1 1/2 cups sugar

  • 1 cup or 2 sticks of unsalted butter at room temperature

  • 1 (8 oz.) package cream cheese at room temperature

  • 4 eggs at room temperature

  • 1 1/2 teaspoon vanilla extract

  • 1 1/2 teaspoons baking soda

  • 1/2 teaspoon salt

  1. Preheat your oven to 350º. Lightly grease a 9x5-inch loaf pan with butter or non-stick spray.

  2. Cream together the butter, cream cheese and sugar in a large bowl then, beat in the eggs and vanilla.

  3. Whisk together the flour, baking soda and salt until combined. Gradually mix all the ingredients together and add the cranberries.

  4. Pour the mixture into the greased baking dish.

  5. Place in the oven and bake for 60-70 minutes, or until toothpick inserted in center comes out clean.

  6. Remove from oven and let cool at least 15 minutes before serving.
